Job description
The hotel is currently reviewing its Food & Beverage concepts and is looking for a talented Sous chef to join this picturesque hotel with large riverside garden, restaurant and bar. Whilst it caters for its resident and non-resident guests in the A la carte Restaurant and Bar, it also hosts a variety of events and Weddings throughout the year. We are looking for someone who works well in a team and can support the Head Chef in their duties, as well as running the kitchen in their absence.
BUSINESS RESPONSIBILITIES
1. Assist the Head Chef in the implementation of new menus for the Hotel
2. Prepare dishes to the highest standards of quality, safety and consistency
3. Ensure recipes are followed to ensure risk of cross contamination are kept to a minimum
4. Ensure standards are followed to ensure consistency of quality
5. Work as part of a team in preparation, cooking, garnishing, or presentation of food
6. Follow standards and regulations relating with cleanliness, hygiene and safety
7. Assist the Head Chef in the ordering of food and consumable items
8. Check the quantity and quality of received products in the absence of Head Chef
9. Ensure the Head Chef is notified of equipment malfunctions and breakdowns
RESPONSIBILITIES FOR STANDARDS
1. Check the quality of raw or cooked food products to ensure that standards are met
2. Supervise/coordinate activities of chefs or staff engaged in preparation, cooking, garnishing, or presentation of food
3. Follow all specs for food production and ensure that all staff follow those
4. Monitor sanitation practices to ensure that employees follow standards and regulations
5. Check the quantity and quality of received products report any shortages to the Head Chef to follow up
6. Ensure that cleanliness if of the highest standard and the SFBB book is completed daily and all relevant cleaning schedules
7. Ensure that all food hygiene practises are followed by yourself and the team
8. Determine production schedules and staff requirements necessary to ensure timely delivery of services
GENERAL RESPONSIBILITIES
1. To be constantly vigilant in respect of Health & safety issues and report any promptly
2. Maintaining high standards of quality control, hygiene and Health & Safety
3. Assist the Head Chef in the administration of Human Resources matters for the Kitchen
4. Follow all emergency procedures and ensure that these are communicated to the Kitchen team
5. To be constantly vigilant of security risks and immediately report any suspicious incidents
